The Bouche estate covers 40 hectares spread over several municipalities from Limoux to Ajac. The cellar is located in La Digne d’Aval, a circulating village in the heart of the Limouxin terroir. Founded in 1992 by Bruno and Bernadette Bouché who five years previously moved there from Champagne – where Abel Bouché owned a hectare of vines in the 1920s.
With their three sons, Guillaume, Valentin and Paul now working at the winery the family history continues… All production takes place on the domaine with the focus being on respecting the land and fruit (organic conversion is in part underway), consistent quality and stability.
